Veggie week: Recipe 4 – Halloumi burger

Sometimes you long for a good burger, even during this veggie week… So I thought why not making a burger which is totally appropriate this week?!

Here’s what you need:
♠ A pistolet per person
♠ Eggplant caviar (eggplant, garlic, olive oil, pepper & salt)
♠ Halloumi cheese
♠ One onion
♠ Three tablespoons of sugar
♠  Water
♠  Slices of cucumber
♠  Slices/pieces of tomatoes
♠  Lettuce

Start by slicing the halloumi into pieces with a thickness of one centimeter. If you make them too big, the burger will be very heavy. Grill the cheese in some olive oil (or other) until you get a nice goldenbrown color. Meanwhile start baking the onion. When it’s also somewhat colored, add the sugar and a little bit of water. Let it boil until you get sticky, caramelized onions.

If you want to make the eggplant caviar yourself:
♥ Cut the eggplant in half
♥ Pour olive oil over each half
♥ Put in a preheated oven to 180°C, with a clove of garlic, for 30-40 minutes
♥ Take the eggplant pulp out with a spoon and put in a blender with some olive oil, peper, salt and the crushed clove of garlic
♥ Blend everything.. and ready!

Now make your burgers by putting first the caviar on the pistolet, next the halloumi and the caramelized onions, finally end with the cucumbers, tomatoes and lettuce.
