Veggie week: Recipe 4 – Halloumi burger

Sometimes you long for a good burger, even during this veggie week… So I thought why not making a burger which is totally appropriate this week?!

Here’s what you need:
♠ A pistolet per person
♠ Eggplant caviar (eggplant, garlic, olive oil, pepper & salt)
♠ Halloumi cheese
♠ One onion
♠ Three tablespoons of sugar
♠  Water
♠  Slices of cucumber
♠  Slices/pieces of tomatoes
♠  Lettuce

Start by slicing the halloumi into pieces with a thickness of one centimeter. If you make them too big, the burger will be very heavy. Grill the cheese in some olive oil (or other) until you get a nice goldenbrown color. Meanwhile start baking the onion. When it’s also somewhat colored, add the sugar and a little bit of water. Let it boil until you get sticky, caramelized onions.

If you want to make the eggplant caviar yourself:
♥ Cut the eggplant in half
♥ Pour olive oil over each half
♥ Put in a preheated oven to 180°C, with a clove of garlic, for 30-40 minutes
♥ Take the eggplant pulp out with a spoon and put in a blender with some olive oil, peper, salt and the crushed clove of garlic
♥ Blend everything.. and ready!

Now make your burgers by putting first the caviar on the pistolet, next the halloumi and the caramelized onions, finally end with the cucumbers, tomatoes and lettuce.

Veggie week: recipe 2 – Vegetable pilaf

I tried a new recipe and my family was a little bit suspicious but it turned out to be really good! And healthy, no meat, no salt and just a small amount of fat!

These are the ingredients for four persons:
♥ Olive oil
♥ 1 onion
♥ 2 cloves of garlic
♥ 2 teaspoons of ground cumin
♥ 2 teaspoons of paprika powder
♥ half a teaspoon of pili pili
♥ 300 gr of long-grain rice
♥ 2 dl of white wine
♥ 3 tomatoes
♥ 150 gr of mushrooms
♥ 1 zucchini
♥ 1 broccoli
♥ 4 dl of vegetable broth

Start by cutting the onion into pieces and bake them for 10 minutes in some olive oil. Meanwhile, cut the garlic, the tomatoes and the zucchini into small pieces, the mushrooms into slices and the broccoli into florets. When the 10 minutes are over, add the garlic and the spices. Bake for about a minute.

Add the rice and mix well. Add the broth, wine, tomatoes and mushrooms. Let it boil, then lower the heat, add the broccoli and let simmer with a lid on the pan for about 15 minutes.

Add the zucchini and let it sidder again for about 7 minutes.

Dinner is ready!

Veggie week: recipe 1 – eggplant zucchini toast

Next week, on thursday the first of October, world veggie day takes place! And there’s another initiative, veggie week, for the ‘die hards’, for the ones who want to take a challenge, those caring about animals or the environment, … It started yesterday, so it’s going from thursday to thursday and ends with world veggie day.

I will be posting some recipes this week, veggie recipes obviously. And here’s the first one! All credits go to my sister, Katia, I had nothing to do in the making of the recipe, nor preparing it.

For one person you need:

♣ 2 slices of bread
♣ Several slices of zucchini and eggplant
♣ One or two tomatoes
♣ 1/4 cucumber
♣ One avocado
♣ Half a lemon
♣ Pepper & salt
♣ Olive oil
♣ Optional: salad, oregano,…

Bake the slices of eggplant and zucchini with some (sea) salt in olive oil. When they get a nice color, put the slices between some kitchen paper to extract the olive oil. While doing this bake the slices of bread also in olive oil.

Next, make sandwiches by putting the slices of vegetables, pepper and salt between the bread. Put it in a preheated oven on 180°C and let it grill.

Meanwhile, make a salad composed with ingredients of your choice. We made a salad with tomato and avocadocubes, lemonjuice, pepper and salt.

Above making a delicious dinner my sister also presented it in a lovely way! Thanks sis!

It’s an easy recipe, but baking the zucchini and eggplant takes some time so take this into account when preparing this.

Oatmeal Crepes

In my trials to be somewhat healthy I made oatmeal crepes! The recipe is super easy – think you already know my recipes are always easy ;-).

For three crepes you need:
♠ A banana
♠ 2 eggs
♠ Half a portion of oatmeal (+/- 15 gr)

Mix everything together and bake in some margarine/butter/oil.

I served it with fresh whipped cream and grapes, but there are endless possibilities! Honey, jam, fruit salad, peanut butter,…

If you eat one crepe in the morning, you’ll have energy ‘till noon (at least!).

Throw kindness around like confetti.

You don’t know what is happening in someone’s life, or head. You have no idea what kind of day they had. And a little kindness is always heartwarming. When you had a bad day yourself it can be difficult to remain kind. But I will try every day again to be kind to the people I meet.

As you might have noticed, I can’t find the time to post my quote on Wednesday anymore. That’s why I’m moving it to Sunday! Every week with another beautiful picture taken by my Friend Katrien H.!

Chicago Café

One of my girlfriends knew this place and wanted to take the rest of us here. And I am very happy she did. I’m thankful she let us discover this lovely place with great food.

When we entered Chicago Café we were catapulted back to the sixties. I really loved the interior. The colors, the benches, the chairs, the plants, the kidscorner, …

We went for a brunch but you can go for breakfast, lunch, teatime, a good cocktail, juices, cake, burgers, toast. Whatever you want, they have it!

Everything is home made and the things I tasted were delicious and really not expensive!

So if you want to spend a nice time, in a cosy place, with good food and drinks, and in a great location (near place Sainte-Cathérine), I really recommend this café!

Have you ever thought about your home and why you love it. Did you ever move out? And if you did, did you need a lot of time before the new place felt like home?

I heard stories about people who couldn’t get used to their new place. But isn’t home what you make of it? And if they didn’t feel right when they entered the place for the first time, why did they move in anyway? 

I believe feelings are very important. When the feeling isn’t right you should not continue, because usually it doesn’t turn out well. And I also believe you long for a place because of the people who are still there, because of the feeling you had when you were there with them.

Like the first place you traveled to with your first love.

Like the place you went on holiday to every year when you were little.

Like your grandparent’s home.

Like the park where you used to hang out with your friends when you were in high school.

So many places… So many memories and so many feelings intertwined with it.

Be around the people you love, and every place you go will feel like home.
