I don’t know if the concept “Thursday veggie day” is popular outside Belgium. As its name indicates, it’s the day of the week on which you shouldn’t eat meat. And I happen to have a veggie recipe!
It’s a quinoa salad. These are the ingredients:
– 100 gr of peas
– 275 gr of quinoa
– one or two onions
– a clove of garlic
– two red peppers (or 1 red and 1 yellow or green, whatever you prefer!)
– three tomatoes
– 50 gr of olives
– curry powder
– 1 dl of white wine (half a cup)
– olive oil
Boil the quinoa with some kurkuma, according to the instructions on the box. In the meantime blanch the peas by cooking water with some salt. Add the frozen peas and let them boil for a minute or two before draining them.
Now, peel and cut the onion and garlic. Remove the seeds from the peppers and cut them into strips. Bake these ingredients with some olive oil. Add the wine, curry powder and salt. Let simmer until the vegetables are cooked.
At last, cut the tomatoes (and the olives). Add everything together in a bowl and your quinoa salad is ready!!
The next day, I baked the leftovers and added soy cream, herb cheese (Boursin), smoked salmon, dried oregano, fresh mint, cherry tomatoes and a toast!
