White chocolate muffins with red forest fruit

I discovered a great muffin recipe. I actually have to confess that it wasn’t a real adventure, since I tried them once before. I liked them a lot, so I just had to share the recipe with you. Once you’ll have tasted the muffins, you’ll completely understand ;-)

Here is what you need for twelve muffins:
– 125 gr of self-rising  flour
– 55 gr of sugar
– 42 gr of cold butter
– 1 egg
– 90 ml of milk
– 90 gr of red forest fruit (optionally frozen)
– 70 gr of white chocolate

First you have to preheat the oven to 200°C. Then, sieve the flour over a large bowl and add the sugar. Stir in the butter. Next, make a small dimple in the middle of the flour mixture.
Whisk the egg separately in a little bowl and add the milk.

Pour this into the dimple. Mix a little, not too much! Add the forest fruit to this mixture. Then, cut the chocolate into little pieces and put half of it into the mixture. Mix again, but just a little.

Next, divide the dough over the muffin cups and sprinkle the rest of the chocolate over it.

Bake for about 27 minutes.
